Nearly everything from the pig was and is still cooked, smoked or pickled: pig butt, pig ears, hog jowls, ham hocks and even the pig's feet.

Chicken. This roaming and friendly bird is a perfect match for the free spirit of Sagittarius. Of course, the ways to cook this bird are legion, and bears witness to the Sagittarian impulse to find bigger and better ways to cook anything. Also, animals from small game hunting -- like possum and rabbit -- come under the sign of Sagittarius.
Capricorn (Dec. 22 to Jan. 19)
The calcium in leafy vegetables -- like collard greens, pokeweed, turnip greens, dandelion greens, spinach and kale -- appeals to Capricorn. It was the greater balance of greens in the diets of slaves that allowed them to work as long and as hard as they could. Of course, the bitterness of the greens was offset with smoked meats or was heightened for greater flavor with vinegar.
Aquarius (Jan. 20 to Feb. 18)
Whole grains, like rice, hominy grits and oatmeal. The whole grains that the enslaved Africans used were very helpful in rounding out a meal, but they also fostered good blood circulation and a healthy colon. Aquarius is all about keeping it real and whole grains do just that. In fact, what might be one detriment to the current soul food diet may be the substitution of whole grains for processed and enriched ones.

Fish. Fishing must have been one of the few chores for a slave that allowed him or her to experience freedom, relaxation and solitude -- all the things that Pisceans usually enjoy. Like chicken, fish was prepared in a multitude of ways. However, unlike other meats, there were different kinds of fish for different tastes. This definitely proves perfect for the Piscean desire for change and variety.
